- Professor Michelle McKinley
Professor of Nutrition, Centre for Public Health, Queen’s University Belfast
Lecture: “Introduction to the Food Matrix”
Professor McKinley will provide an overview of the Food Matrix concept and its relevance in contemporary nutrition research. Her talk will include examples of how food matrices are key determinants of the health properties of food and the implications of such research for dietary advice and dietary guidelines.
- Dr. Alida Melse-Boonstra
Associate Professor, Division of Human Nutrition, Wageningen University & Research
Lecture: “Bioavailability of Micronutrients from Nutrient-Dense Whole Foods”
Dr. Melse-Boonstra will delve into the complex interactions within food matrices that influence the bioavailability of key nutrients. She will focus on two food groups:
🥛 Dairy: Discussing the bioavailability of vitamins A, B2, B12, K, and minerals like calcium, phosphorus, magnesium, zinc, and iodine.
🥬 Vegetables & 🍏 Fruits: Exploring nutrients such as pro-vitamin A, folate, vitamins C and K, potassium, calcium, magnesium, and iron.
Her insights will highlight how understanding the absorption and bioavailability of nutrients from whole foods in interaction with food components that influence these processes will help to estimate better exposure in epidemiologic studies that relate dietary intake to health outcomes.
